Hearty Black Bean Soup

As the temperatures begin to drop and we welcome the winter with glove covered hands and our most stylish umbrellas, there is nothing that cures the cold better than a good hearty, warm soup. Enjoy this black bean soup curled up on the couch with your beau and a movie or at your desk as you tie up loose ends and projects before the holidays. It’s a great recipe for those busy Stylust women, or for those that cooking is not their forte as it is super simple (really just a matter of tossing all the ingredients together and blending).

Hearty Black Bean Soup

Makes 4 medium sized servings

3 cup black beans, canned, drained, and rinsed
1 1/2 cup vegetable broth
2 cup chunky salsa
1 1/2 cup firm tofu cut into small cubed pieces
2 tsp cumin
1 tbsp light sour cream
1 cup cooked wild (or brown) rice

Topping
1 1/2 tbsp light sour cream
1 tbsp chives

Place 2/3 of the beans and all other ingredients except rice in the blender and puree.
Mix with cooked rice, add the remaining 1/3 of the beans.
Simmer for 15 minutes, stirring frequently.
Let cool, mix well and serve.
Garnish with 1 1/2 tablespoon of light sour cream and sprinkle with chives.
