Turkey Cranberry Salad with Almonds and Goats Cheese

Hearty is rarely a word used to describe salad. Even though salads are relatively easy to prepare and are great for light summertime meals, there  is not really much going on for them come fall. This turkey cranberry salad with almonds and goats cheese will leave you feeling not only satisfied but it’s so tasty you will want to make it several times a week if not everyday. The ingredients are simple, affordable, and compliment one another perfectly. I’ve even done it on several occasions without any dressing and it was still mouth watering and utterly divine. It has been my saving grace when getting ready in a rush – I just throw it all together and go.

Turkey Cranberry Salad with Almond and Goats Cheese

1 1/2 cup mixed greens or romaine lettuce
1 tbsp almonds
1tbsp cranberry
1 tbsp goats cheese
2 thin slices of turkey breast (or 1/2 cup of cubed turkey breast or you can just do chicken if you are already tired of turkey this season)
1/4 of a pear sliced thinly (or 1/2 cup chopped into cubes)

It really is just a matter of tossing everything together evenly  – no fancy pants stuff happening here. Just plain deliciousness. You may choose to do a light balsamic/olive oil/Dijon dressing as well but as I said this recipe is just great without it. Makes one serving.
